Although women now make up almost half of the world’s workforce, studies have shown that they still do most of the housework. A recent study by the Food and Nutrition Institute (DOST-FNRI) found that 6 out of 10 households reported moderate to severe food insecurity. The Philippines have been battling food insecurity for decades, and unfortunately the COVID-19 pandemic only exacerbated the issue.
But during this global pandemic, eating a healthy diet is a must. According to the World Health Organization, “No food or dietary supplement can prevent or cure COVID-19 infection, but a healthy diet is important for immune system support”. Good diet can also reduce the risk of developing conditions like heart disease, diabetes, and cancer – all of which can lead to complications for those who get COVID-19.
However, preparing nutritious home cooked meals doesn’t have to be such a daunting task. There are simple hacks you can practice to get used to making nutritious and delicious meals at home:
1. Frozen is as good as fresh
With the recent surge in Delta variant cases and the latest implementation of ECQ in Metro Manila, Laguna, Iloilo, and Cagayan de Oro, families are urged to stay indoors as much as possible and even cut important journeys. However, stocking healthy ingredients such as fresh fruit and vegetables is not always possible as they have a short shelf life.
The good thing is that frozen fruits and vegetables contain roughly the same amount of vitamins and minerals as fresh products and can last up to eight months (for vegetables) or 12 months (for fruit) in the freezer. Meat and poultry can be stored in the freezer for up to a year.
2. Cook in large quantities
Whether you’re too busy, lacking motivation, or running out of ideas, there are days when you just can’t cook. On days when you have the time and energy to prepare a large amount of food, just make double what you need. Set the leftovers aside in a freezer-safe container for those difficult days.
3. Make cooking and eating something the whole family can look forward to
Cooking can’t feel so daunting when you have an extra pair of hands to help. Studies have shown that including children in the kitchen can also lead to healthier eating habits. Start young by assigning young children to simple tasks like opening packages, sorting ingredients, and setting the table. Older children, on the other hand, can help chop vegetables and take control of the stove while you attend to other important tasks.
All of this is beneficial not only for parents. By creating a space for learning and collaboration, families can build a healthy routine and strengthen their bonds.
